Afghan Cuisine

Afghan cuisine is largely based on the country’s main crops, such as wheat, maize, barley, and rice. Accompanying these staple grains are native fruits, vegetables, and dairy products, such as milk, yogurt, whey, pomegranates, grapes, and sweet melons. 

Popular dishes include:

  • Kabuli palaw – the national dish of Afghanistan, consisting of steamed rice mixed with raisins, carrots, and either beef or lamb
  • kebabs – spiced minced or ground meat, usually lamb, beef, or chicken, formed into cylinders on skewers
  • korma – a stew with an onion and tomato base
  • mantu – steamed dumplings filled with onion and either ground beef or lamb
